Stopped by a small restaurant called Las Carnitas in the town of San Vicente. A woman was making fresh cuajadas. A type of soft moist cheese made by shaping them in the palm of the hand.
Cuajadas are generally served in a banana leaf and eaten with warm tortillas. They were playing Roy Orbison's "Dream Baby" as I sat there enjoying this treat.
