On the way to my grand fathers town of Nuevo Guadelupe we stopped by a small sugar cane mill to check out the process. Here large boilers cook the unrefined sugar.  It slowly evaporates until  it becomes a type of sweet honey like substance.

Its put ito molds and formed into cylinder like shapes once hardened. Here they are being wrapped and ready to be shipped out. In the more rural areas like this one, the process has never changed.
